Vegan Palak Tofu

Make this really simple, healthy, delicious, and vegan spinach and tofu recipe on weeknights when you don't feel like cooking.

Makes 6-8 servings



  1. In a large saucepan, heat 2 tsp. olive oil on high. Add the tofu cubes, sprinkle with ¼ tsp. salt, and stir fry until golden brown on all sides, about 10 minutes. Take out of pan and set aside.
  2. In the same saucepan on medium high heat, add remaining 2 tsp. olive oil, tomato, Niwala Palak Gosht Organic Spice Blend and remaining 1/4 tsp. salt. Heat for about 2-3 minutes. Add 1 cup of water and mix to combine.
  3. Add frozen spinach to pan. Stir to combine while breaking up the spinach until the mixture is heated again and bubbling. Reduce heat to low, cover and simmer for 10 minutes.
  4. Remove lid from pan, increase heat to high, and sauté for another 10 minutes stirring constantly until almost all of the water evaporates.
  5. Gently stir in tofu cubes and serve with rice or naan.
